Me\u0111utim, uz utjecaj na kvalitativna svojstva vina, a s obzirom na suvremene trendove istra\u017eivanja vina koja se temelje na prou\u010davanju bioaktivnih spojeva koji blagotvorno djeluju na ljudsko zdravlje cilj ovog istra\u017eivanja bio je i pridonijeti spoznaji o vrijednosti autohtone sorte \u2018Teran\u2019 koja je nedovoljno istra\u017eena u tom smislu. S obzirom da su bioaktivni spojevi \u010desto prisutni u vrlo niskim koncentracijama, pojavio se interes za pronalaskom tehnologija koje \u0107e pove\u0107ati njihovu ekstrakciju, ali u isto vrijeme i pozitivno utjecati na aromatski profil vina te o\u010duvati ili \u010dak pobolj\u0161ati klju\u010dne parametre senzorne kvalitete vina. Stoga je glavni cilj ovog istra\u017eivanja bio ispitati utjecaj razli\u010ditih vinifikacijskih tehnologija na kemijski sastav, senzorna svojstva vina i koncentraciju bioaktivnih spojeva u vinima sorte \u2018Teran\u2019 (<em>Vitis vinifera<\/em> L.) kroz identifikaciju i kvantifikaciju fenolnih spojeva, hlapljivih spojeva arome, vitamina C i vitamina B skupine, minerala (makro- i mikroelemenata) te kroz odre\u0111ivanje antioksidacijskog potencijala i senzornih svojstava vina. Pokus je obuhva\u0107ao sljede\u0107e tretmane: kontrola &#8211; maceracija u trajanju od 7 dana &#8211; TM7 (S), produljena maceracija u trajanju od 10 dana &#8211; TM10 (S), produljena postfermentacijska maceracija u trajanju od 21 dan &#8211; TM21 (S) te predfermentacijski tretman zagrijavanja u trajanju od 48 sati na 45 \u00b0C nakon \u010dega je uslijedila maceracija u ukupnom trajanju od 10 dana &#8211; TPHT (S). Istra\u017eivan je i utjecaj dozrijevanja vina svih prethodno navedenih tretmana u drvenim hrastovim ba\u010dvama u trajanju od \u0161est mjeseci TM7 (Z), TM10 (Z), TM21 (Z), TPHT (Z). Osnovne fizikalno-kemijske analize provedene su prema standardnim metodama O.I.V.-a. Pojedina\u010dni fenolni spojevi analizirani su teku\u0107inskom kromatografijom visoke djelotvornosti (HPLC). Ukupni fenoli te ukupni i slobodni antocijani odre\u0111eni su spektrofotometrijski. Antioksidacijska aktivnost odre\u0111ena je spektrofotometrijski pomo\u0107u FRAP i ORAC testova. Vitamin C i vitamini B skupine analizirani su teku\u0107inskom kromatografijom visoke djelotvornosti. Multielementarnom metodom odre\u0111ivanja elemenata (ICP-OES) odre\u0111ena je koncentracija makro- i mikroelemenata. Hlapljivi spojevi arome izolirani su iz uzoraka vina mikroekstrakcijom na \u010dvrstoj fazi pomo\u0107u SPME vlakna, a za odre\u0111ivanje je kori\u0161tena metoda plinske kromatografije (GC-MS). Uzorci vina ocijenjeni su O.I.V. metodom od 100 bodova te kvantitativnom deskriptivnom senzornom analizom. Rezultati ovog istra\u017eivanja pokazali su da su predfermentacijski tretman zagrijavanja masulja &#8211; TPHT (S) i produljena postfermentacijska maceracija &#8211; TM21 (S) zna\u010dajno utjecali na pove\u0107anje koncentracije hidroksibenzojevih kiselina i ukupnih fenola te vrijednosti antioksidacijskog kapaciteta. Tretman TPHT (S) utjecao je i na porast koncentracija hidroksicimetnih kiselina i mikroelemenata dok je tretman TM21 (S) u vinu \u2018Teran\u2019 pove\u0107ao sadr\u017eaj flavan-3-ola, stilbena, slobodnih i ukupnih antocijana, vitamina B kompleksa i makroelemenata. Vina navedenih tretmana ocijenjena su vi\u0161im ocjenama za senzornu kvalitetu vina, svrstana su u kategoriju vrhunskih vina i opisana vi\u0161im intenzitetima pozitivnih senzornih svojstava. Dozrijevanje vina je zna\u010dajno utjecalo na pove\u0107anje koncentracije slobodnih hlapljivih spojeva arome, dok su bioaktivni spojevi bili manje stabilni te su se koncentracije dozrijevanjem ve\u0107inom smanjivale. Tretman dozrijevanja vina zna\u010dajno je utjecao na senzornu kakvo\u0107u vina te su sva vina nakon dozrijevanja bila okusno punija s manje izra\u017eenom kiselosti, astringencijom i gor\u010dinom. Dobiveni rezultati ovog istra\u017eivanja pridonijeli su definiranju utjecaja predfermentacijskoga zagrijavanja i duljine maceracije masulja te dozrijevanja vina na kemijski sastav, senzorna svojstva i koncentraciju bioaktivnih spojeva u vinima sorte \u2018Teran\u2019, a sve s ciljem identifikacije klju\u010dnih \u010dimbenika relevantnih u proizvodnji visokokvalitetnih vina te razvoju vinifikacijskih tehnologija koje \u0107e maksimalno iskoristiti potencijal
